Vegan cookies are always a win! Always love making up my own recipes and playing around in the kitchen. Especially when they can be vegan, low-carb, and refined sugar free (if you go the agave route!).

Easy, Breezy breakfast cookies: Banana, Chocolate, Oat style!
2 mashed bananas
1/2 cup of brown sugar or 1/4 cup of agave (I used agave!)
2 cups oats
1 cup flour (gluten free flour can be substituted!)
1 teaspoon cinnamon
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup almond or soy milk
4 tablespoons of vegan butter or coconut oil (I melted vegan butter in the microwave for 20 seconds and viola!)
1/2 cup cocoa nibs or dark chocolate chips melted in the microwave
Stir everything together and top with a dark chocolate chunks if you have them! Then 15 minutes in the oven at 325 degrees.
Feel free to add flax seeds or chia seeds to these delicious breakfast cookies, friends! Y-U-M!
